3-Step Salad From Scratch

My favorite place to be is in the kitchen!

I love making home-cooked meals, and creating salads from scratch!

I also love organizing my home and putting food in fun jars and making everything pleasing and asymmetrical to the eye (but that’s a different story)!

Here is my current favorite salad recipe! Enjoy!!!

DIRECTIONS

  1. Start with your salad base

  2. Mix in your salad dressing

  3. Add your roasted vegetables

  4. Add your protein

  5. Enjoy!

ingredients

  • Base: Mixed greens, arugula, and chopped romaine lettuce

  • Oils: Extra virgin olive oil, balsamic vinegar, a full-fat dressing with no unnecessary oils or ingredients! My favorite right now is Chosen Foods Lemon Garlic dressing

  • Vegetables: Roasted broccoli, green beans, carrots, and big brussels sprouts, red onions, and bell peppers

  • Protein: 2 pasture-raised eggs (or shredded chicken, chicken breast, wild fish, turkey)

  • Big handful of organic arugula
  • Chopped romaine lettuce
  • Trader Joe’s Cauliflower Gnocchi (found in freezer section- click on the link for a description on how I made it!) The key is to not follow the instructions on the package...
  • Drizzle of Bolthouse Ranch Dressing
  • Optional: soft-boiled eggs, nutritional yeast topping, and boiled baby carrots (so soft and delicious!)
