Single Serving Banana Pancakes Using Protein Powder

Ever want to do more with your protein powder?

Banana pancakes have been my new favorite thing!

All you need is 7 simple ingredients!

  1. 1 egg

  2. 1/2 banana

  3. 1 serving of vanilla protein powder

  4. 1/2 tsp of baking soda

  5. Liquid stevia (to taste)

  6. A touch of himalayan sea salt

  7. 1-2 tbs. almond milk

Directions

  1. In a blender, crack egg and blend for 1 minute (a well beaten egg helps bring out the fluffiness of the pancake!)

  2. Add banana, protein powder, baking soda, sea salt and stevia to the mix

  3. Add 1-2 tbs. of almond/coconut milk or water until it comes out to a batter-like consistency

  4. Heat a pan on medium-low using 1 tsp. of coconut oil

  5. Pour batter into pan making 1 big pancake

  6. Let sit on each side for 2-3 minutes or until golden brown!

  7. Enjoy!

optional TOPPINGS/ADD-INS!

  1. Organic blueberries or strawberries

  2. Cacao nibs or Lily’s Chocolate Chips (sweetened with Stevia) or Enjoy Life Chocolate Chips (GF, DF)

  3. Organic peanut butter or almond butter (spread on top) with a touch of maple syrup!

  4. Collagen (grass-fed)

  5. Chia seeds

This recipe makes 1 serving. You can double the portions for 2 and make whatever size pancakes you like best!
