My Story
When I first started working at The Nutrition And Wellness Center, I still carried a lot of weight. I don’t exactly mean physical weight, but more mental weight.
You see, I worked at the office, but I didn’t believe in the magic behind it… That nutrition and diet can outrun any medical industry or written prescription on a bottle.
I believe there was something that shut down in me at 12 years old when I was first diagnosed with diabetes, and I thought I was going to die young, so there was no point in caring or trying to get better.
I then went onto high school and college not really caring as well and being “okay” with higher blood sugars. I would eat all the artificially flavored foods, sugar, popcorn, breads and sodas too.
Finally, something snapped in me and I decided I didn’t want to wake up and be miserable any longer. I didn’t want to eat the same bowl of oatmeal at 10am, and then wait until 5pm to have a protein bar, because I didn’t know what else to eat. I didn’t want to starve myself, and feel ugly all the time. I didn’t want to pick at mirrors and look for flaws in myself, because I wasn’t right in the head. I stopped eating the foods that were killing me (i.e. sugar-free maple syrup, nonfat yogurt) and started adding variety, fats (so scary) and protein. It has taken me over a year to change some of the bad habits and I'm still learning and incorporating new habits today.
I would like to refer to the bible verse that God knows your heart and this one rings true: “Delight yourself in the Lord, and He will give you the desires of your heart.” Psalm 37:4. It may not be right now, tomorrow, or next week, but He hears your prayers and knows your deepest desires!
Right now, my favorite drink is a root beer Zevia (although only recommend having 1-2 per week, because they are very bubbly and can upset your stomach) or a GTS Kombucha (Original and Trilogy are my absolute favorite). I love roasting vegetables, eating sliced cucumbers and carrots, salads, soft-boiled eggs, walnuts, baby carrots, and pickles. I can eat cold tuna for breakfast or salmon. I also love homemade popcorn, Halo Top ice-cream, and movie nights.
My favorite smoothie at work is mango cinnamon which we have now coined "Pumpkin Cheesecake" and is the Smoothie-of-the-Week about every week. I also love blending kale, spinach, and avocado in my smoothies and would highly recommend it!
