6 Minute Soft-Boiled Eggs

Almost anyone can do eggs, and they are such a great source of protein, cheaper than most, and have so many health benefits!

If you’re like me, I thrive on high fat and low-sugar diets, and crave eggs and fresh fruits and vegetables every day...

Place eggs in boiling water with slotted spoon and put the cover back on. Let them simmer/boil for 6-7 minutes

6 minute soft-boiled eggs

Directions:

  1. Let a covered pot of water come to a boil

  2. Gently place eggs in boiling water with a slotted spoon and cover back up

  3. Keep it boiling and set the timer for 6 minutes

  4. Once timer goes off, immediately transfer the eggs to an ice bowl to cool

  5. Once cool, peel and enjoy and save the rest for later in the fridge!

Pro Tip: If you have more than a couple eggs, leave them in longer to boil! The more eggs you have, the longer it will take for them to cook.

About what your egg will look like with the timing! Bring pot to boil, place eggs in, cover pot, set timer, and go! Don’t forget to submerge them in ice water after to cool and freeze the yolk!

What’s for breakfast or lunch?

For breakfast or lunch, I’ll either make an omelet or a big salad with lots of dark leafy greens (spinach, arugula, romaine) and two eggs. Consuming healthy fats like egg yolks is what helps keep us full for so much longer longer. Protein and fat are very satiating macronutrients.


What’s for dinner?

For dinner, I’ll make roasted vegetables (usually broccoli, brussels, sweet potatoes, carrots, green beans) with extra virgin olive oil spray, Himalayan pink sea salt, and some sort of protein usually mixed in (eggs, chicken, ground turkey)!

Eating all organic and unprocessed foods is what works best for me! It’s also what works well for so many of us!
